Diagnosing the Fault Rather Than Guessing

The most expensive way to fix a commercial gas problem is to replace parts until the symptom goes away. A structured diagnosis is quicker and usually cheaper:

  1. 1Establish the pattern. Which appliances, at what time, under what load, and since when. A fault that only appears at peak points somewhere very different from one that is constant.
  2. 2Check storage. Contents, which bank is in service, whether the changeover has operated, and whether there is frosting on the vessels.
  3. 3Measure pressure at each stage. At the first stage regulator outlet, at the second stage, and at the appliance — both static and under load. Comparing those readings localises the problem to a section.
  4. 4Test the pipework. A tightness test shows whether the system holds; sectional testing narrows down where it does not.
  5. 5Check the appliance side. Injectors, burner ports, flame supervision, ignition and the appliance regulator where fitted.

Why do my burners lose pressure only when the kitchen is busy?
That pattern points to the supply side rather than the appliances. The usual causes are pipework undersized for the current load, a regulator that cannot pass enough gas at peak demand, or a cylinder bank that cannot vaporise fast enough and is chilling down. Measuring working pressure at the furthest appliance while everything runs will identify which one. It is very common where equipment has been added over the years.
Why does my regulator freeze up?
Frost forms because liquid LPG absorbs heat as it vaporises, and a vessel or regulator that is being drawn on harder than it can supply chills as a result. It usually indicates that vaporisation capacity is marginal for the demand, especially on cold mornings. The remedy is more capacity rather than a new regulator, though a failed or undersized regulator can contribute.
Can commercial gas appliances be repaired, or do they have to be replaced?
Many faults are repairable: blocked or worn injectors, dirty burner ports, failed thermocouples, ignition faults and appliance regulator problems are all common and fixable. Replacement becomes the better option where parts are no longer available for an older imported model, or where the appliance is beyond economic repair. Check first whether the fault is actually on the supply side, because a starved appliance can look faulty when it is not.
How often should a commercial gas system be serviced?
There is no single figure that fits every installation, but heavily used commercial systems benefit from at least an annual inspection, and hospitality kitchens are best served by scheduling it ahead of their busy season. Sites with high continuous demand, coastal exposure or a history of faults justify shorter intervals. Whatever interval you choose, having it documented is what makes it useful.
My changeover valve did not switch and we ran out mid-service. Why?
Either the changeover mechanism has failed, or the reserve bank was already empty because the indicator was never checked after the last switch. The second is more common than the first. Automatic changeover keeps you running through one bank emptying, but it only works if someone notices the indicator and swaps the empties. Building that check into a daily routine costs nothing.
Do I need a new certificate after a gas repair?
If the repair alters the installation rather than replacing a component like for like, the altered installation needs to be tested and certified again. Even for a straight replacement, keep a written record of what was done and the test readings taken afterwards. What should my staff do if they smell gas?
Stop using the equipment, do not operate electrical switches or anything that could create a spark, ventilate by opening doors and windows, evacuate the area, and isolate the gas at the emergency shut-off or at the storage if that can be reached safely.
