Almost every restaurant LPG system breaks into the same three parts, and quotes become far easier to compare once you can see which part a price covers.
- Storage. Cylinders, a cylinder bank or a bulk tank, sited outside in a ventilated position with delivery access. This is where most site-specific problems appear, because storage has to suit the building rather than the kitchen.
- Distribution. The regulated pipework that carries gas from storage to the kitchen, including first and second stage regulation, isolation valves and the route the pipe takes through or around the building.
- Appliance connections. The drop points, isolation cocks and flexible connectors at each piece of equipment, sized for what that appliance actually draws.
Every job should then finish with tightness testing, commissioning of each appliance and a compliance certificate. If a quote does not mention testing and certification, ask before accepting it.
Food-Service Businesses We Cover
The equipment differs but the underlying system is the same across hospitality:
- Restaurants and bistros — typically a six-burner range, oven, char grill, fryers and a salamander on one line, with the gas draw peaking during a two-hour service window rather than spread through the day.
- Takeaways and fast food — fryer-heavy loads that run continuously through trading hours, which changes how cylinder banks are sized and how often they need refilling.

Cooking Equipment Connected to Restaurant Gas Lines
Sizing a restaurant system starts with a list of every appliance and its rated input. The equipment below appears on most Cape Town kitchen lines:
- Open-burner ranges and target-top stoves
- Chinese wok burners and stock pot burners — these draw far more than a standard burner and are the single most common reason an existing line runs short of capacity
- Char grills, chargrills and lava rock grills
- Salamanders and overhead grills
- Deep fryers, single and twin basket
- Combi ovens, convection ovens and deck ovens
- Pizza ovens, including deck and rotating types
- Bains-marie, bratt pans, boiling pans and rice cookers

Add the ratings up, apply a realistic diversity factor, and the result gives you pipe size, regulator capacity and storage requirement. Adding one high-draw appliance to a line designed years ago for something smaller is what causes burners to drop off at peak service.
Where the Cylinders Go
LPG is heavier than air, so any leaked gas settles at low level rather than dispersing upwards. That single property drives most of the storage rules: cylinders belong outside, in a well-ventilated position at or above ground level, away from drains, basements, lift pits, cellars and stairwells where gas could collect.
In practice, restaurant storage in Cape Town usually ends up as one of the following:
- A cylinder bank in a steel gas cage in a service yard or alley
- A wall-mounted or bollard-protected bank against an external wall in a courtyard
- A bulk tank on a base for high-consumption or multi-outlet sites
- A rooftop or podium-level installation where a shopping centre or mixed-use building has no ground-level yard
Separation distances from doors, opening windows, ventilation intakes, electrical equipment and boundaries all apply, and they vary with installation size. Have your installer confirm what applies to your site rather than working from a generic figure — better to find a problem during quoting than after the pipework is in.

Very few operators can hand over the kitchen for a week. Most restaurant gas work in Cape Town is therefore split so that the disruptive part is as short as possible:
- 1Survey during quiet hours. Appliance schedule, pipe route, storage position and access are all confirmed before any material is ordered.
- 2First fix off the live system. New pipework, brackets and the storage compound can usually be built while the kitchen keeps trading on the existing supply.
- 3Tie-in during a planned shutdown. The changeover from old to new is the only part that genuinely needs gas off, and it is normally scheduled overnight, on a closed day, or between lunch and dinner service.
- 4Test and commission. Tightness testing, purging, appliance-by-appliance commissioning and flame checks.
- 5Hand over. Certification, a walk-through of the isolation points and emergency shut-off with your kitchen team, and any as-built drawings.
On a full fit-out, gas has to be coordinated with the extraction contractor and the electrician, because the canopy, make-up air and any interlock all interact with the gas installation.
Ventilation, Extraction and Emergency Isolation
Gas cooking equipment produces combustion products that have to be removed, and it needs adequate replacement air to burn cleanly. On a commercial kitchen line that means:
- A canopy sized for the equipment beneath it, with sufficient make-up air — without it, extraction pulls against the burners and flames become unstable
- Low-level and high-level ventilation to the kitchen where the design calls for it
- An emergency gas shut-off, positioned so staff can reach it on the way out rather than having to cross the line to get to it
- Gas interlock arrangements on many installations, so the gas supply cannot be established while extraction is off
- Isolation valves at each appliance, so one machine can be taken out of service without shutting the whole kitchen down
These are the details most often picked up when an older kitchen is inspected, particularly where equipment has been swapped over the years without the ventilation being revisited.
Certificates and Paperwork for Restaurant Gas
In South Africa a Certificate of Conformity is issued for a gas installation by an authorised person registered to carry out that work. For a restaurant it tends to matter in four situations: a landlord requiring it as a lease condition, an insurer asking for it, a health or fire inspection, and a sale where the incoming operator's attorney asks for it.
A CoC covers the installation as it was at certification. Once appliances are added, moved or replaced, or pipework is altered, it no longer describes what is there and the system needs re-inspecting. Restaurant Gas Installation Costs in Cape Town
A two-burner addition and a full fit-out for a 120-seat restaurant are not the same job, so a single price would be meaningless. What actually moves the number on a quote:
